Ok firstly, Ski Lengths.
I skiied in NZ earlier this year and was using a ski that was about 180cm long (I`m 6 foot tall, 75kgs). I then went to Perisher (Australia) a little later in the season and used a ski that was 170cm long. In my opinion this ski was way better. I loved how it was shorter, it made it so much easier to ski. Now the stuff I was skiing in both occasions was pretty much hard pack. Would there be a problem getting a 170cm ski when skiing Whistler?
I am an Intermediate skier that knows nothing about skis
Which of the following would you ski gurus suggest for Whistler (going in early Feb) for an Intermediate doing mostly Green and Blue runs?:
Salomon X-Scream Series Salomon Scream Pilot Salomon Scream Pilot 8 Salomon Crossmax 8 W Rossignol Bandit XX Atomic 9.18 L Atomic 9.22 Head Supercross Ti
Also, would there be a problem with my girlfriend, who is mostly a competant beginner level skier, hiring this type of gear. I`ve been told it is fairly high range stuff (I really wouldn`t have a clue!).
Thanks a lot for your help!

This is good because you can try several skis and decide which one is best for you. You might want to explore this option.

As others have said, the really smart thing to do is to hire the skis when you get there. All the skis you list are fine skis, but you`ll find some that make you ski much better and some that make you ski worse. Also, many of the skis you list are too advanced and too demanding of technique for the level you describe yourself. There is big individual difference between ski models and between skiers. You really do need to try different brands, different models, and different lengths. You will be amazed at how well you ski on the right ski. How will you know the right ski? By the size of your smile. Ken
